I love Pork Spare Ribs – just awesome & this recipe is simple & easy to get sorted even late in the day when you pull up for the night. I would & do even prepare & be marinating Ribs as you travel, plus have the corn prepared in the foil as well so you have an very easy tasty 1st or 2nd nights dinner ready!!!
1kg Chinese Style Pork Ribs about 1cm thick
2 tbsps brown sugar
1 tbsps olive oil
1 garlic clove, crushed
¼ cup Tomato puree
¼ cup Worcestershire sauce
Sea Salt Flakes
4 fresh trimmed corn cobs
Couple of pinches of Chilli flakes
1 tsps lime zest
Real Butter (soft)
# Place the sugar, olive oil, garlic, tomato puree, Worcestershire sauce & the
Sea salt into a bowl & mix together. Toss to completely coat the ribs. Set aside for 15mins.
# Tear off 4 x 300mm sheets foil & 1 lay corn cob in centre of each. Layer corn
cob literally with butter using a knife & lightly sprinkle over lime zest & chilli flakes.
#Wrap corn cobs in the foil & twist each end.
# Heat your BBQ plate or Cast Iron Grill Pan over gas or wood medium heat & place corn cobs
on for 20mins, turning occasionally until sweet & tender inside (test with fork & taste).
# Place the marinated ribs on the Grill Pan or BBQ Plate & cook for about 5mins on either side
or until well done & you can pour/brush a little marinade over them as they cook for more flavor.
