Lamb Shanks in Camp Oven

– I cant help but get excited when I think about camping & cooking up Lamb Shanks in a Camp Oven on a fire on an Outback Track somewhere in this great country. Your Lamb Shanks will last 1 or 2 weeks in a fridge or esky if double vacuum sealed (safe guard for holes) by your butcher + it tenderizes them.



4 lamb shanks

Seasoned flour

Olive oil

Good squeeze of garlic paste

2 tbsps tomato paste/puree

2 cans chopped tomatoes

1 tsp oregano

1 tsp coriander

1 tsp cumin

1 tsp paprika

1 tsp beef stock powder in ½ cup water



# Roll lamb shanks in seasoned flour

# Chop fresh coriander & oregano or use dried herbs

# Mix quality beef stock powder with ½ cup water


Cooking Method…

# Heat Camp Oven & brown off Lamb Shanks

# Add a squeeze of garlic paste, the oregano, coriander, cumin & paprika to Camp Oven & gently cook out

# Add tomatoes, stock with water & bring gently to boil

# Cook for approx 2 to 2½ hours on 180* C or medium heat (will depend on coals)
